Kreuther Handcrafted Chocolate is open next door to Gabriel Kreuther Restaurant in the iconic Grace Building overlooking New York's vibrant Bryant Park.
As the pastry chef of Gabriel Kreuther Restaurant in Bryant Park, Marc Aumont creates sensational seasonal desserts & handcrafted chocolates, rooted in classical French technique that gorgeously complement the exquisite cuisine of chef Gabriel Kreuther.
Born in Tours, France, Aumont spent his childhood in Chamonix-Mount Blanc surrounded by the world of pastry at his parent’s successful bakery, La Gerbe d’Or. From a young age, he spent many hours in the shop with his father, learning classic French pastry techniques and flavor combinations, while developing a deep fascination & skill for the delicate art of chocolate and sugar sculpture.
At the early age of 16, Marc took over his father's bakery where he continued on in his love of chocolate & pastry built upon his deep-rooted family heritage. After 12 years running his family’s bakery, Aumont enrolled in the regarded Culinary School of Pastry in Groisy, France. Upon graduation he moved on to the Ecole Nationale Superieure de la Patisserie in Yssingeaux, France, where he spent six years focusing on confectionary, ice cream and chocolate where he built upon his noted talent for chocolate & sculpture.
Aumont relocated to New York City in 1998 where he worked for chef, David Bouley. There, he further developed traditional French recipes driven by the modern flair & new interpretations of traditional sweets. Making a splash in the New York pastry world, Aumont moved to Compass restaurant where he was significantly praised for his artful desserts by New York magazine, New York Observer and The New York Daily News.
Aumont was first introduced to Kreuther in 2004, when he joined the opening team of The Modern, as Executive Pastry Chef along with Kreuther, Executive Chef.
Kreuther, who grew up working on his family’s farm and learned the family business of pastry & chocolate at his uncle’s patisserie, says of his unique bond with Aumont, “Having grown up in my family's business & always driven by my passion - even as a small boy - it is special when I have that understanding. When I met Marc, I knew that we would collaborate. I know the importance of the relationship between his creations to mine & vice versa. I had immediate understanding and a bond with Marc. I can’t always put into words what we do, just that it works & it works together."
“After working together, it was clear that we both shared a mutual & dedicated respect for the kitchen and the craft of pastry and chocolate. It was one of the soulful meetings in my life.” shares Aumont.
The two worked side-by-side for a decade garnering praise from local, national and international press, including a three-star review from Pete Wells of The New York Times, who called Aumont’s mignardise trolley an “unexpected delight.” At Gabriel Kreuther Restaurant, which opened last June, Wells further extended his praise, exclaiming “I don’t think Mr. Aumont can make a dessert I wouldn’t like." He also praised Aumont’s use of “forms & shapes” while his wonderful flavors stay “clear & direct”.
Kreuther & Aumont, are now fulfilling a life-long goal and furthering their highly revered partnership, with the opening of Kreuther Handcrafted Chocolate, an extension of the Gabriel Kreuther Restaurant located next door in Bryant Park.
